The road along the side of Lake Taal between San Nicholas to Laurel (below Tagaytay) in Batangas is good. Not that its particularly scenic, its just nice road surface. The view is not bad though, as you will have views of the lake, good views of the volcano. It is slightly undulating. Its mostly tree-lined so pretty comfortable to ride. Very easy ride, good for a day trip.
Provincial road from Santa, Ilocos Sur to Vigan... lots of nice trees, great view along the beach... just be careful as there might be occassional speeding cars.
Vigan would have to be one of my preferred places to live in the Philippines. Can see myself around there in future. Best preserved Spanish architecture in the Philippines. Apparently the mayor is buying up the town and improving this precinct. Its a nice hinterland and good beaches.
